Meal 2: Crabcakes and Easy Greek Salad

This is a little lighter fare, its still really good though, and its fast! Plus if you make extra crab cakes they can be easily frozen. I put ww points with these recipes. I calculated them myself soooo hopefully its accurate..its about as accurate as I can get.

Easy Feta Salad
whole thing=6 pt so divide into 6 servings and it is 1 pt
1 head romaine lettuce
1 cucumber, peeled and sliced
1 tomato, chopped
1/2 c red onion, sliced
2 tsp. feta cheese, crumbled
2 tbsp. olive oil
2 tbsp. lemon juice
1 tsp. oregano
1/2 tsp. salt

  1. combine lettuce, tomato, cucumber, onion and feta into a bowl
  2. whisk together olive oil, lemon juice, oregano, and salt
  3. pour olive oil mixture over lettuce mixture and toss to coat
Crab Cakes
14 pts for 8 crab cakes, about 2 pts for 1 crab cake

2 cans crab meat, drained
3 stalks green onion, chopped
1 stalk celery, chopped
2 tbsp mayo (reduced fat)
1 tbsp mustard
1 tsp Cajun seasoning
1/2 c. crackers (reduced fat)
2/3 c. panko flakes

  1. Turn on broiler in oven
  2. Mix everything together into a bowl.
  3. Form mixture into patties and put on greased cookie sheet
  4. Put crab cakes into oven and cook both sides for 7 minutes.

Meal 1 Chicken and Dumplings

Now be careful and don't eat too much cuz this will fill you up in no time!

Chicken and Dumplings
  • 1 whole chicken

  • 2 quarts water

  • 2 carrots, cut in quarters
  • 2 stalks celery, cut in quarters
  • 1 whole onion cut with skin on
  • 2 tsp. salt
  • 1 tsp. pepper
  • 2 cups all purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 3 tbsp. shortening
  • 3/4 cup buttermilk (add 1 tbsp. vinegar to 1 cup milk let sit 5 minutes, then measure 3/4 cup)
  • 2 chicken bullion cubes
  • 1 tbsp. corn starch mixed with 1 tbsp milk
  1. Place chicken and cut up veggies in a pot. Add water and 2 teaspoons salt. Bring to a boil.
  2. Cover, reduce the heat, and simmer for 1 hour or until tender (should almost fall off bone).
  3. Bone the chicken and cut meat into bite-sized pieces.
  4. Strain broth and bring to a boil and add pepper, bullion, and milk/corn starch mixture.
  5. Combine the flour, baking soda, and salt. Cut in the shortening. Add the buttermilk, stirring with a fork until moistened.
  6. Knead the dough 4 to 5 times pinch off pieces and drop into boiling broth. Reduce the heat to medium-low, and cook for about 8 to 10 minutes, stirring occasionally.
  7. Add chicken to broth and dumplings. Serve and Enjoy!
